Creamy Hearty Winter Soup

This delightful soup combines tender Portobello mushrooms, creamy potatoes, and vibrant spinach, all enveloped in a smooth, rich broth. Topping it off with crispy chickpeas instead of traditional croutons adds an exciting crunch that makes every bite unforgettable!

Not only is this soup bursting with incredible flavors, but it also includes nutritious ingredients like spinach and chickpeas, which bring a wealth of vitamins and minerals to your meal. The spinach is full of iron, while the chickpeas provide protein and fiber, making this dish as healthy as it is satisfying.

Ingredients

  • 3 T. olive oil, divided
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 c. vegetable stock
  • 2 c. warm water
  • 7 oz. Portobello mushrooms, chopped
  • 1 medium potato, peeled and cubed
  • 7 oz. heavy cream*
  • 2 c. baby spinach, rough chopped
  • Sea salt and black pepper, to taste
  • 1 c. canned chickpeas, drained, rinsed and lightly patted dry
  • 2 T. olive oil

*Note:

To prevent curdling, add a small of hot liquid from pan to heavy cream before adding it to the soup.

Directions

  1. Heat 2 tablespoons of olive oil in a stock pot over medium-high heat. Add the onion and garlic, sautéing until the onion is soft and translucent, about 4-5 minutes.
  2. Add vegetable stock, water, mushrooms, and potatoes to the pot.
  3. Bring to a boil, then reduce the heat and simmer until potatoes are tender, approximately 10 minutes – timing may vary based on the size of potato cubes.
  4. Tempering the cream: Add a spoonful of the hot liquid to the heavy cream before stirring it back into the pot. Mix well and let it simmer for 1-2 minutes.
  5. Add spinach and let it simmer for an additional 5 minutes. Season with salt and pepper to taste, then remove from heat and keep covered to maintain warmth.
  6. In a small skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chickpeas until they are crispy, stirring occasionally.
  7. To serve, ladle the soup into bowls and top with the crispy chickpeas. Enjoy!
