Ingredients
- 1 lb. russet potatoes
- 1 large egg yolk
- ½ c. fresh parsley, chopped
- ¼ c. parmesan cheese, finely grated
- 5 oz. mozzarella cheese, diced in 1/4” cubes
- 2 large eggs
- 1 c. breadcrumbs
- Sea salt and black pepper, to taste
- Vegetable oil, for frying
Directions
- Place unpeeled potatoes in a large pot, cover with cold water, and generously season with salt. Bring to a boil and cook until fork-tender, about 25-35 minutes.
- Drain the potatoes, cool slightly, then peel and pass through a ricer or mash until smooth.
- Add egg yolk, parsley, parmesan, and mozzarella to the potatoes. Mix well and shape into 8 oval croquettes. Refrigerate for 30 minutes.
- Heat vegetable oil to 350˚F in a medium saucepan.
- Set up a breading station: beat eggs in one dish and place breadcrumbs in another, seasoned with salt and pepper.
- Roll the croquettes in the beaten eggs, then dredge in breadcrumbs, pressing to adhere.
